Steve Butera’s Hot Brown
- 2 slices of bread
- 1lb. deli sliced turkey
- 8oz. Heavy Cream.
- 1 tomato
- Lots of cheese
- 1 cup flour
Set oven to broil and allow to preheat.
Get your sauce pan going on a medium heat and melt some butter as you slowly whisk in some flour you’ve formed your roux. Remember that everything is gonna be okay, we’re all still standing, I mean look at you you’re cooking dinner!
Just keep the roux going at a medium-low heat, stirring frequently, all the while breathing deeply knowing no matter what you have friends and family that love you. Then start to introduce a little heavy cream into the roux until it starts to simmer. Then as you remove the sauce from heat, toss in some romano cheese mix melting your roux into a mornay sauce. Maybe call your parents and say hi while you add nutmeg, salt and pepper to your sauce.
Then take one slice of toast, because we still have bread everyone, lets not get crazy we don’t have to wait in line for it or anything, unless of course Bill Meck even thinks about snow, HAHAHA am I right? see just a little smile there. Anyway take that toast and put a couple slices of turkey on it, mmmm turkey just think Thanksgiving is right around the corner, that’ll be fun.
Now add some thickly sliced tomatoes and put em on top of the turkey, and dump some of your sauce on top, cover it completely, just drown those bad feelings in your slowly cooked mornay sauce, sprinkle some extra cheese on top, mmmm cheese!
Now put all of it in a broiler until your cheese is nice and brown, then add some bacon. Yay bacon! See we did it. One day at a time gang.
